Guava Coconut Cocktail Jellies

INGREDIENTS

Coconut-Lime Layer (Red Hearts)

1 cup Cold water

1/3 cup Lime juice

2 packets of Knox unflavored gelatin

2 tbsp Sugar

1/4 tsp Coconut extract

Red food coloring

Pinch of salt

 

Guava-Coconut Layer (Pink Base)

3 1/8 cup Guava nectar

1 cup Bellagave Coconut Tequila

1/2 cup Water

4 packets of Knox unflavored gelatin

2 tbsp Lime juice

2-3 tbsp Sugar (adjust based on how sweet your guava nectar is!)

Pinch of salt

 

PREPARATION

Make the Red Hearts

 

  1. Bloom gelatin with water, lime juice, and sugar
  2. Gently heat to dissolve
  3. Stir in coconut extract, salt, and red coloring.

 

Chill & Cut

 

  1. Pour into shallow pan (~1/4″)
  2. Chill until firm
  3. Cut out heart shapes & refrigerate

 

Make the Guava Layer

 

  1. Bloom gelatin with guava nectar & lime juice
  2. Stir in hot water until dissolved

 

Add the Booze

 

  1. Cool slightly, then mix in coconut tequila, sugar, and salt
  2. Adjust sweetness to taste

 

Assemble

 

  1. Place hearts in greased pan
  2. Pour a thin layer of guava mix to seal
  3. Chill for 1 hour

 

Set + Slice

 

  1. Pour remaining guava layer
  2. Chill 2-3 hours (or overnight)
  3. Cut into 1″ cubes
