Guava Coconut Cocktail Jellies
Made with love, sealed with tequila
Makes 25 Jellies
INGREDIENTS
Coconut-Lime Layer (Red Hearts)
1 cup Cold water
1/3 cup Lime juice
2 packets of Knox unflavored gelatin
2 tbsp Sugar
1/4 tsp Coconut extract
Red food coloring
Pinch of salt
Guava-Coconut Layer (Pink Base)
3 1/8 cup Guava nectar
1 cup Bellagave Coconut Tequila
1/2 cup Water
4 packets of Knox unflavored gelatin
2 tbsp Lime juice
2-3 tbsp Sugar (adjust based on how sweet your guava nectar is!)
Pinch of salt
PREPARATION
Make the Red Hearts
- Bloom gelatin with water, lime juice, and sugar
- Gently heat to dissolve
- Stir in coconut extract, salt, and red coloring.
Chill & Cut
- Pour into shallow pan (~1/4″)
- Chill until firm
- Cut out heart shapes & refrigerate
Make the Guava Layer
- Bloom gelatin with guava nectar & lime juice
- Stir in hot water until dissolved
Add the Booze
- Cool slightly, then mix in coconut tequila, sugar, and salt
- Adjust sweetness to taste
Assemble
- Place hearts in greased pan
- Pour a thin layer of guava mix to seal
- Chill for 1 hour
Set + Slice
- Pour remaining guava layer
- Chill 2-3 hours (or overnight)
- Cut into 1″ cubes
